This fresh,and very tasty Greek-inspired dish is a perfect summer recipe, and is very good for those counting the calories too!.

Ingredients

  • 6 courgettes, finely sliced

  • 200g tinned tomatoes

  • 150g ricotta

  • Handful of fresh mint, chopped

  • 1 tsp dried oregano

  • Salt and freshly ground black pepper

  • 50ml olive oil

  • 100g parmesan, grated

Directions

  1. Preheat the oven to 180C/Gas 4.

  2. In a deep baking dish measuring about 20 x 30cm, start layering up the vegetables.

  3. Begin with a layer of courgettes, then tomatoes, then a scattering of ricotta, then mint and oregano.

  4. Season each layer and drizzle with a touch of olive oil.

  5. Repeat to use up all the vegetables.

  6. Finish the top layer with the parmesan

  7. Bake for 40mins when top is golden
