This has a great twist, the Grenadine adds great colour and taste to the rhubarb that will add that something special to your dessert!

Rhubarb & Grenadine CrumbleIngredients

  • 800g Rhubarb (Chopped Roughly)
  • 1 Orange (Juice & Zest)
  • 140g Demerara sugar
  • 3 Tablespoons Grenadine
  • 150g Self-Rising Flour
  • 50g Porridge Oats
  • 150g Unsalted Butter
  • 110g Muscovado Sugar (Light Soft Brown Sugar)

Directions

  1. Pre-heat oven to 170˚C (Fan Oven), 180˚C (Conventional Oven)
  2. Place a Rhubarb in suitably size cooking dish.
  3. Sprinkle with Muscovado Sugar and pour over the Grenadine
  4. Roast for 10-15 minutes until the rhubarb has softened.
  5. Meanwhile, for the crumble topping rub the butter, flour and Demerara Sugar in together with your fingers to a crumb, before adding the oats. Incorporate all ingredients evenly before placing on top of the rhubarb.
  6. Cook in the oven for 40-45 minutes until the crumble top is golden brown.
  7. Serve with ice-cream or custard?
